Option 1: Classic French buns
A variation of delicious French yeast dough buns with their own secrets. Butter plays an important role; in no case do we replace it with margarine. The dough itself is kneaded with milk. We take any fat.
Ingredients
- 0.4 liters of milk;
- 20 g yeast;
- 4 eggs;
- 1 kg of flour;
- 500 g sugar;
- 70 ml of vegetable oil;
- 250 ml of water for syrup;
- 200 g butter.
How to make classic French buns
Step 1:
We put a dough of half milk, yeast and 40 g of granulated sugar, add about 100 grams of flour. Stir, leave for half an hour.
Step 2:
Grind the yolks with 60 grams of granulated sugar, beat the whites separately until frothy. Add dough to the yolks and another 200 ml of warm milk, stir. Next, we introduce vegetable oil, flour, in the process we add proteins and make the usual cool dough. Add as much flour as needed.
Step 3:
Immediately divide the dough into five parts, roll each into a circle and place 40 grams of butter in the center. We roll it up in an envelope, roll it into a cake, roll it up into a tube, roll it up with a snail. Cover, leave for an hour. Then we roll the snail into a cake and roll it again. We leave for another half hour. We keep the dough in the refrigerator.
Step 4:
Now roll each piece of dough into a circle, cut into triangles and twist small bagels. Put on a baking sheet, leave for 1.5 hours. As soon as they rise well, bake at 200 degrees.
Step 5:
Boil the remaining sugar and water for a minute, you can add vanilla or cognac to them. We take out the French buns from the oven, dip them in hot syrup, put them on baking paper, cool them down.
From this amount of products, about 40 small buns are obtained. If desired, they can be made smaller and larger, for this we initially divide the dough not into five, but into three or four parts.
