Brownie is a very popular dessert in many countries. There are many variations of its preparation: with cottage cheese, raspberries, cherries, etc. Today I will show you how to make brownies with cherries and please your family with a delicious chocolate berry dessert.

For brownies with cherries, berries can be used frozen or fresh, with or without pits.
Frozen cherries must be defrosted before adding to the dough. To do this, transfer the frozen cherries to a colander, put in a deep bowl and let them thaw.
All liquid from the cherry will drain into the bowl. We only need berries, and the juice can be used to make compote, cherry sauce, jelly, etc.
Break the chocolate into pieces in a deep metal or glass bowl.
The recipe uses 72% cocoa dark chocolate, which gives the cherry brownie a rich chocolate flavor.
Add cubes of butter to the pieces of chocolate (it is better to use good quality butter with 82% fat content).
Take a saucepan or stewpan with a small diameter, poursome water and put on fire.
When the liquid boils, put a bowl of chocolate and butter in this saucepan. This design is called a "water bath". It is very important that the boiling water does not touch the bottom of the bowl, and the moisture itself does not get into the chocolate and butter, otherwise the mass may separate.
Stir the contents of the bowl with a whisk to create a smooth and shiny chocolate mass.
Add sugar and continue stirring with a whisk until the sugar is completely dissolved.
Remove the bowl from the water bath, wait 3-4 minutes for the chocolate mass to cool slightly.
Add medium eggs one at a time, whisking vigorously each time to prevent curdling in the hot chocolate.
Sift flour into a bowl of chocolate mass and mix thoroughly so that the flour combines well with the liquidpart, and there were no lumps.
Add cherries to the chocolate dough, mix gently so that the dough covers each berry.
Cover the form d 20 x 20 cm with good quality parchment paper (thanks to the brownie parchment, it will be easy to remove from the mold and cut into squares).
Pour the dough into a mold, smooth with a spatula.
Put in an oven preheated to 180 degrees for 25-30 minutes.
The cooking time for brownie with cherries will depend on the height of the mold and, accordingly, on the thickness of the dough layer.
I recommend that you start checking the brownie after 20 minutes of cooking. If a stick stuck in the middle of the pie comes out slightly damp, without sticking dough, the dessert is ready. It should not be dry, which means that you have overdried the cake.
A real brownie comes with a moist crumb, but that doesn't mean thatthe pie is raw, this dessert should have a moist texture.
Allow the finished cherry brownie to cool slightly in the mold and cut into squares.
