
Mackerel is a wonderful tasty fish, especially when cooked over an open fire. It has a golden crust, a haze aroma and a "relaxing in nature" smack. I like to serve this fish right away with a side dish of vegetables such as eggplant. If you don't like eggplants, replace them with zucchini, tomatoes, mushrooms, peppers, or prepare a mix of vegetables.

How to cook grilled mackerel with eggplant
- Mackerel - 1 pc.
- Parsley - 5 sprig (s)
- Salt - 0 to taste
- Thyme - 3 sprig (s)
- Spices - 1.5 tsp Italian herbs
- Eggplant - 1 pc.
- Vegetable oil - 2 tbsp
- Salad - optional for serving
- Cherry tomatoes - optional for serving
Preparation: Step 1
To prepare mackerel with eggplant on the grill, peel the mackerel carcass, cut off the head, gut, rinse under running water and wipe the inside and outside with a paper towel.
Salt and season the fish well inside and out. I like to use a mixture of Italian or Mediterranean herbs.
Rinse and dry the parsley sprigs, cut the long stems and place the sprigs in the belly. For more flavor, add a sprig of thyme.
Tear off fresh thyme leaves and sprinkle over the fish. Drizzle lightly with vegetable oil to help the thyme stick better.
Cut the eggplants into slices and then into two or four pieces. Put them in a bowl, season with salt, spices (all with the same mixture of Italian herbs) and pour over with vegetable oil.Stir with your hands to distribute the oil and spices evenly.
Place the fish on a wire rack. If you have a grid for several sections, and the fish is one, then the fish should be placed in the center.
Fish should be cooked in an even, not very strong heat until golden brown. The mackerel must be constantly turned over so that it does not burn and dry out.
Put the eggplants on another wire rack and cook on the grill until stripes appear. They will soften and take on a "tanned" color. Do not overcook the eggplant until it is black. You can cook the vegetables first and then the fish.
Put salad greens and parsley on a dish if desired. Put the fish on top.
Put eggplants on the sides of the fish and decorate the finished dish with tomatoescherry. Serve mackerel with eggplant on the grill with white wine for a good mood :)
