In the recipe, I use a mix of olive oil and vegetable oil, but you can use just olive oil or just vegetable oil. Lemon juice can also be substituted for white wine vinegar. If you will use only olive oil, then I advise you to take not Extra Virgin, but Olive Oil (this is a mixture of refined oil 85-90% and Extra Virgin oil 10-15%).

Ingredients

  • Vegetable oil 100 ml.
  • Chicken egg 1 pc.
  • Mustard spicy 15 gr.
  • Mustard granular 15 gr.
  • Lemon juice 30-40 ml.
  • Salt, sugar and pepper to taste.

Preparing the Greek Salad Dressing

  • Mix the oil together and refrigerate for 30 minutes. Squeeze out the lemon juice.
  • In a bowl, combine the egg, lemon juice, both types of mustard, put a little salt, sugar and ground pepper. Beat thoroughly with a whisk until a homogeneous consistency is obtained.
  • In the resulting mixture, in a thin stream, while constantly whisking, pour in the oil. When you see that the sauce has thickened, you can pour in the oil more boldly.
  • Ready Greek sauce, the consistency is like liquid mayonnaise. Bring the sauce to taste. Pour into a suitable container, cover, and store in the refrigerator for up to 2 weeks.
