Ingredients

  • Pomegranate juice - 1.5 tbsp. (200 ml)
  • Brown sugar - 3 tbsp
  • Butter - 3 tbsp
  • Potato starch - 1 tsp
  • Coriander - 1 pinch
  • Salt - 1 pinch

Cooking method

  • Pour a glass of freshly squeezed pomegranate juice into a saucepan. Bring to a boil. Reduce heat to medium.
  • Add brown sugar.
  • Add butter. Add a pinch of salt and coriander. Mix well to dissolve the sugar, butter and spices.
  • Dilute a teaspoon of potato starch in the remaining pomegranate juice at room temperature. Mix thoroughly so that all the starch is dissolved.
  • With a thin stream, carefully pour the starch dissolved in the juice into the sauce.
  • Stirring occasionally, cook the sauce until it has evaporated by a third and slightly thickened. This usually takes 20 minutes. For a thicker sauce, add 2 tsp. starch instead of one, or lengthen the cooking time so that the sauce evaporates by half. The pomegranate sauce is ready!
  • How and with what to serve:

Serve the sauce warm, before serving - warm it up, since due to the presence of butter in the composition, the pomegranate sauce in the refrigerator hardens and becomes covered with an oily crust.

Store the sauce in the refrigerator.

    By the way:

    • It is better to use juice that you squeezed yourself, but if for some reason this is not possible, then you can buy ready-made juice in the store.
    • Do not replace brown sugar with regular sugar - the sauce will lose its caramel flavor, besides, the white sugar is sweeter, and we don't need it. If you are using store-bought pomegranate juice, reduce the amount of sugar to 1 tbsp. l.
